About & experience

Emanuele Votano

Built from real operations. Designed for growth.

Devolus was founded in New York City by Emanuele Votano, an Italian business developer with a background in economics from Bocconi University in Milan. After working in consulting and startups, he led the U.S. expansion of All’Antico Vinaio, managing the opening and operations of up to twelve locations across New York, Los Angeles, and Las Vegas.
He worked closely with investment partners and local operators to translate an artisanal product into a scalable business model while maintaining authenticity and consistency.

Emanuele later joined Gelateria Gentile as Director of Operations and Business Development, overseeing five stores and a central production lab dedicated to artisanal gelato and pastry.

Through these experiences, he developed Devolus as a bridge between strategy and execution — a framework designed to help hospitality brands and investors grow with structure, discipline, and human insight.
